Asparagus gratin with creamy mushrooms, boiled eggs, crunchy crackers, and melted cheese.
Ingredients:
  • 4 eggs
  • 3 (15 ounce) cans asparagus, drained
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • 2 cups crushed buttery round crackers
  • 4 ounces shredded Cheddar cheese
Instructions:
  • In a saucepan, gently nestle eggs and cover them with cold water. Bring to a boil, then promptly remove from heat. Let the eggs rest in the hot water for 10-12 minutes. Peel, cool, and slice.
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 2 quart casserole dish.
  • Create a delicious casserole by arranging 1 1/2 cans of asparagus, 1 can of mushroom soup, 2 eggs, and 1 cup of crushed crackers in layers, then repeat the process with the remaining ingredients.
  • Bake covered for 25 minutes in a preheated oven. Sprinkle with grated cheese, cover again, and bake for an extra 5 minutes until the cheese is melted.
