Elegant asparagus, avocado, and tuna wraps for chic finger food.
Ingredients:
  • 12 asparagus spears, ends trimmed
  • 1 large avocado, mashed
  • 12 yellow corn tortillas
  • 400g good quality tuna in oil, well drained
  • Salt
  • Black pepper
Instructions:
  • Briefly blanch asparagus spears in boiling water for 1 minute, then shock in ice water, drain, and set aside.
  • Wrap the tortillas snugly in foil and allow them to gently warm up in a 160C oven for 5 minutes. Then, trim them to a size of 5cm by 12cm.
  • Sprinkle avocado with salt and freshly ground black pepper to your liking.
  • Lay out tortilla, slather with creamy avocado, and generously top with flavorful tuna flakes.
  • Lay asparagus spears at one end of the tortilla, then roll it up tightly and fasten with a wooden skewer.
