Asparagus with bacon & walnuts

Elegant asparagus dish with bacon and walnuts.
Ingredients:
  • 2 bunches (about 400g) asparagus, trimmed
  • 27.30 gm olive oil
  • 2 rashers (about 150g) middle bacon, rind removed, thinly sliced
  • 40g Californian light walnuts (Naturally Yours brand), roughly chopped
  • Salt & ground black pepper
Instructions:
  • Fill a frying pan with water until it reaches a depth of 1-2cm and bring it to a boil. Add the asparagus and cook for 2-3 minutes until tender crisp. Drain the asparagus and then dry the pan with paper towel.
  • In a pan over medium-high heat, heat 1 teaspoon of olive oil. Add bacon and cook, stirring occasionally, until crisp, about 2-3 minutes. Drain on paper towel. To the same pan, add the remaining olive oil and walnuts, cook for 1 minute. Toss walnuts with asparagus, bacon, and season with salt and pepper. Serve immediately.
