Elevate your morning with a delicious and affordable breakfast of soft eggs, crispy asparagus, and savory bacon crumbs.
Ingredients:
  • 8 eggs, at room temperature
  • 100g streaky bacon rashers (see note), finely chopped
  • 100g piece crusty bread, crust removed, finely chopped
  • 18.20 gm extra virgin olive oil
  • 3 bunches asparagus, trimmed
Instructions:
  • In a medium saucepan, gently place the eggs and cover them with cold water. Bring to a boil over high heat, then reduce the heat to medium and let them simmer for 3 minutes. Remove the pan from heat and delicately transfer the eggs to egg cups using a slotted spoon.
  • Heat a large non-stick pan over medium-high heat. Cook bacon for 3 to 4 minutes until starting to brown, then add bread and cook for another 2 to 3 minutes until golden and crisp. Transfer to a bowl and season with pepper.
  • Clean the pan and pour in the oil. Heat over medium-high heat. Cook the asparagus, turning occasionally, for 2 minutes until lightly charred and tender.
  • Gently remove the tops from the eggs using a spoon. Serve the eggs with asparagus dippers topped with crispy bacon crumbs.
