Classic Australian Damper bread - simple, delicious white bread made with self-rising flour. A staple for early settlers.
Ingredients:
  • 4 cups self-rising flour
  • 1 teaspoon salt
  • 1 tablespoon butter, softened
  • 1 cup milk
  • 0.5 cup water
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C) and generously grease a baking sheet.
  • In a large bowl, combine flour and salt, then knead in butter until mixture resembles coarse crumbs. Create a hole in the center, pour in milk and water, and mix until dough forms.
  • Transfer the dough to a lightly floured surface and shape it into an 8-inch round loaf. Place the loaf on the prepared pan and score a cross on top with a sharp knife.
  • Bake the loaf in the preheated oven for 25 minutes. Then, reduce the temperature to 350°F (175°C) and bake for another 5-10 minutes until golden brown and the bottom sounds hollow when tapped.
