Tender pork shoulder marinated in zesty orange juice, guajillo chiles, vinegar, garlic, and achiote paste makes this classic cochinita pibil a must-try dish.
Ingredients:
  • 1 red onion, sliced thin
  • 3 habanero peppers, sliced
  • 10 limes, juiced
  • salt to taste
  • 3 ounces dried guajillo chile peppers, seeded and deveined
  • salt and pepper to taste
  • 3 pounds boneless pork shoulder, cut into 1-inch cubes
  • 3 cups fresh orange juice
  • 1 cup white vinegar
  • 1 bulb garlic, peeled
  • 7.5 ounces achiote paste
Instructions:
  • Mix together the onion, habanero peppers, lime juice, and salt in a bowl. Cover and chill in the fridge while you get the pork ready. Remember to wear gloves when handling habanero peppers and avoid touching your face or skin when slicing them.
  • Place guajillo peppers in a bowl and cover with hot water. Let them soak until softened, approximately 10 minutes.
  • In a large skillet over medium-high heat, heat oil. Season pork generously with salt and pepper, then cook in the hot oil until beautifully browned for 15 to 20 minutes. Transfer the pork to a slow cooker.
  • In a blender, puree guajillo peppers, orange juice, vinegar, garlic, and achiote paste until smooth. Pour the flavorful sauce over the pork cubes in the slow cooker.
  • Slow-cook pork until tender, 6 to 8 hours. Transfer to a serving dish and shred using 2 forks. Drizzle with achiote sauce and top with onion-habanero salsa before serving.
