Flavorful and easy Filipino chicken pancit with simple ingredients.
Ingredients:
  • 4 boneless chicken thighs
  • 1 (8 ounce) package dried rice noodles
  • 2 tablespoons soy-based liquid seasoning (such as Maggi®), or to taste
  • 3 tablespoons olive oil, divided
  • 1 tablespoon sesame oil
  • 0.5 large head cabbage, thinly sliced
  • 2 carrots, julienned
  • 1 teaspoon garlic salt
Instructions:
  • 1. Bring a pot of water to a rolling boil. Cook chicken thighs until fully cooked, approximately 30 minutes. Reserve the flavorful broth in a separate bowl. Shred the tender chicken using two forks.
  • In a large bowl, soak the noodles in hot chicken broth, adding hot water as needed to cover. Let sit until softened, about 5 to 7 minutes. Rinse the noodles with cold water, drain thoroughly, then transfer to a bowl. Stir in soy seasoning, 1 tablespoon of olive oil, and sesame oil. Combine everything well and set aside.
  • In a skillet or large wok over medium-high heat, saute garlic in olive oil until it starts to brown, about 1 minute. Add onion and cook for 2 minutes. Add chicken, cabbage, and carrots, and stir-fry for 3 to 4 minutes. Season with garlic salt. Mix in noodles and soy seasoning to taste before serving.
