Authentic Louisiana red beans and rice with Cajun seasoning and andouille sausage for rich, comforting flavor.
Ingredients:
  • 1 pound dry kidney beans
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 tablespoons minced garlic
  • 6 cups water
  • 2 bay leaves
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon cayenne pepper
  • 0.25 teaspoon dried sage
  • 1 pound andouille sausage, sliced
  • 4 cups water
  • 2 cups long grain white rice
Instructions:
  • Prepare all ingredients.
  • Give the beans a gentle rinse, then let them soak in a generous amount of water in a large pot overnight.
  • In a skillet over medium heat, sauté onion, bell pepper, celery, and garlic in olive oil for 3 to 4 minutes until fragrant and tender.
  • Begin by washing the beans and placing them in a spacious pot with 6 cups of water. Mix in the cooked vegetables. Sprinkle in bay leaves, parsley, thyme, Cajun seasoning, cayenne pepper, and sage for flavor. Bring everything to a boil, then lower the heat to medium-low and let it simmer for 2 1/2 hours.
  • Add the sausage to the beans and let them simmer together for 30 minutes.
  • Prepare the rice by boiling water and rice in a saucepan. Then, cover and simmer for 20 minutes. Serve beans over the steamed white rice.
