Authentic Tiramisu

Classic tiramisu: espresso-soaked ladyfingers layered with creamy mascarpone and dusted with cocoa powder.
Ingredients:
  • 3 large eggs, separated, divided
  • 0.5 cup white sugar
  • 2 tablespoons brandy
  • 2 cups brewed espresso, cooled, divided
  • 2 (8 ounce) packages mascarpone cheese
  • 1 pinch white sugar
  • 30 ladyfingers (such as Savoiardi®)
  • 3 tablespoons unsweetened cocoa powder
Instructions:
  • In a bowl, use an electric mixer to combine egg yolks, 1/2 cup sugar, brandy, and 1 tablespoon espresso until smooth for 2 to 3 minutes. Then, mix in mascarpone cheese until well blended for 3 to 5 minutes.
  • Using an electric mixer, beat egg whites and a pinch of sugar in a clean bowl until stiff peaks form. Carefully fold them into the mascarpone mixture and set aside.
  • Pour the rest of the espresso into a shallow dish. Dip one side of each ladyfinger into the espresso, then neatly arrange them on a serving platter in two rows of 6 and place 2 1/2 ladyfingers at both ends facing opposite directions to create a rectangular shape.
  • Layer half of the luscious mascarpone mixture over the delicate ladyfingers and sprinkle with half of the rich cocoa powder. Then arrange the remaining ladyfingers soaked in espresso, followed by the rest of the mascarpone mixture, and a final dusting of cocoa powder.
  • Chill tiramisu until ladyfingers are tender, for 2 to 3 hours.
