Try this quick and delicious apple and pear cobbler using Bisquick® mix for a traditional dessert ready in just an hour.
Ingredients:
  • 2 1/2 cups coarsely chopped peeled apples (2 to 3 medium)
  • 1/4 cup sugar
  • 2/3 cup apple juice
  • 2 tablespoons apple juice
  • 1 tablespoon cornstarch
  • 2 cups coarsely chopped peeled pears (2 medium)
  • 1 cup Reduced Fat Bisquick™ mix
  • 1/4 cup fat-free (skim) milk
  • 1 tablespoon sugar
Instructions:
  • Preheat the oven to 400°F. Grease a 9x1 1/2 inch round pan with cooking spray. In a 2-quart saucepan, bring apples, 1/4 cup sugar, and 2/3 cup apple juice to a boil. Simmer over medium heat for 5 minutes, stirring occasionally.
  • Combine 2 tablespoons of apple juice with cornstarch in a small bowl. Stir into the apples, cooking until slightly thickened. Take off the heat and fold in the pears before transferring the mixture into the pan.
  • Combine Bisquick mix, 1/4 cup sugar, and orange peel in a medium bowl using a fork. Pour in milk and mix until a soft dough forms, adding more milk if needed. Be careful not to overmix. Drop the dough by heaping teaspoonfuls onto the fruit mixture and sprinkle with 1 tablespoon of sugar.
  • Bake until biscuit topping is lightly golden and fruit mixture is bubbling, for 25 to 30 minutes. Allow to cool for 15 minutes before serving.
