Easy and delightful vanilla fruit cobbler.
Ingredients:
  • 2 x 825g cans whole plums, well drained
  • 1 packet vanilla cupcakes
  • 310ml milk
  • Cinnamon sugar, to taste
  • Vanilla custard, to serve
Instructions:
  • Preheat your oven to 180C (160C fan-forced). Carefully remove the pits from each plum using your fingers. Arrange the plums in a 6-cup capacity ovenproof dish.
  • Prepare the cupcake mix as directed on the packet with milk. Pour the batter over the plums and generously sprinkle cinnamon sugar on top.
  • Bake for 1 hour or until a skewer inserted comes out clean. If the top is getting too brown, loosely cover with foil. Let stand for 5 minutes before serving with vanilla custard.
