Upgrade your cobbler game with Chef John's extra crispy version, perfect for any fruit cobbler. Enjoy warm with a scoop of vanilla ice cream.
Ingredients:
  • 6 large fresh peaches, pitted and cut into eighths
  • 1 lemon, zested and juiced
  • 0.5 cup unsalted butter, at room temperature
  • 1.25 cups white sugar
  • 1.3333333730698 cups self-rising flour
  • 0.33333334326744 cup rolled oats
  • 0.66666668653488 cup whole milk
  • 0.25 cup white sugar
  • 2 tablespoons cold water, or as needed to wet topping sugar
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C). Place a baking sheet on the lower rack to catch any drips. Generously butter a 2-inch deep (2-quart) baking dish.
  • Arrange the peach sections in the baking dish, then generously sprinkle with fresh lemon juice and zest for a burst of citrus flavor.
  • In a mixing bowl, combine butter and sugar. Cream together until it forms a sugary, buttery paste, about 4 to 5 minutes. Add oats and flour, stirring until the mixture resembles coarse crumbs, about 4 to 5 minutes. Pour in milk and stir until the mixture is wet and creamy, like a thick spreadable batter, for about 3 to 4 minutes.
  • Spoon batter over the peaches, spreading it evenly. Sprinkle 1/4 cup sugar on top of the batter and spritz with water until sugar glistens on the surface.
  • Place in a preheated oven on the middle rack and bake until golden brown and crispy, which should take around 45 minutes. Allow to cool for at least 30 minutes before serving.
