Delicious avocado and bacon soup topped with crispy bacon bits, sour cream, and lime zest. Serve with crusty bread for a satisfying meal.
Ingredients:
  • 0.5 pound bacon
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 quart chicken stock
  • 2 avocados - peeled, pitted, and chopped
  • 0.5 cup white wine
  • 1 lime, juiced
  • 1 cup heavy cream
  • salt and pepper to taste
Instructions:
  • Cook the bacon in a skillet over medium heat until evenly browned. Reserve 1 tablespoon of grease in the skillet, chop the bacon, and set it aside. Cook the onion and celery in the same skillet until tender.
  • Combine the onion, celery, and half of the chicken stock in a blender or food processor. Add the avocados and puree until creamy.
  • Pour the blended mixture into a large pot over medium heat, then whisk in the rest of the stock, wine, lime juice, and heavy cream. Season with salt and pepper, and heat up while stirring frequently, making sure not to boil. Serve with a sprinkle of chopped bacon on top for garnish.
