Avocado and cherry tomato salsa wonton cases

Elegant avocado and cherry tomato appetizers, perfect for any cocktail party.
Ingredients:
  • Olive oil spray
  • 36 Shanghai wonton wrappers
  • 2 avocados, halved, stones removed, peeled, mashed
  • 90g (1/3 cup) natural yoghurt
  • 10-12 drops red Tabasco pepper sauce
  • 1 x 250g punnet cherry tomatoes, coarsely chopped
  • 1/2 small red onion, finely chopped
  • 82.50 ml chopped fresh coriander
  • 42.00 gm fresh lemon juice
Instructions:
  • Preheat your oven to 190°C. Lightly spray thirty-six mini muffin pans with oil. Place a wonton wrapper in each pan, pressing to line the base and sides. Bake for 8 minutes until golden brown and crisp. Let them cool completely in the pans before removing.
  • While waiting, place the avocado in a bowl and mix with yoghurt. Add Tabasco sauce to your liking. Combine tomato, onion, coriander, and lemon juice in another bowl. Season with salt and pepper.
  • Evenly distribute the avocado mixture into the wonton cups, then place them on a serving platter. Finish by topping with the tomato mixture and serve right away.
