Vibrant avocado and grapefruit salad with mint-dill vinaigrette and tangy hibiscus salt.
Ingredients:
  • 1 large grapefruit, peeled and sectioned
  • 6 mint leaves
  • 0.5 sprig fresh dill, stemmed
  • 0.5 teaspoon Chinese rice vinegar
  • 1.5 tablespoons avocado oil
  • 1 large ripe avocado, cut into 1-inch pieces
  • 0.25 cup Belgian endive, thinly sliced
  • 2 teaspoons minced fresh jalapeno pepper
  • 0.25 teaspoon coarse ground black pepper
  • 0.125 teaspoon hibiscus salt
Instructions:
  • Combine 1 grapefruit segment, mint leaves, dill, vinegar, and oil in a mini electric blender. Pulse until a flavorful vinaigrette is formed.
  • In a large bowl, combine the remaining grapefruit sections, avocado, and endive. Drizzle vinaigrette over the salad and mix well. Chill in the refrigerator for 1 hour. Just before serving, sprinkle with jalapeno, black pepper, and hibiscus salt.
