Vibrant avocado & grapefruit salad - a colorful, zesty, & refreshing dish to elevate any meal.
Ingredients:
  • 2 tablespoons freshly squeezed lemon juice
  • 1.5 teaspoons Dijon mustard
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 cup olive oil
  • 2 medium ripe avocados
  • 1 medium red grapefruit
Instructions:
  • In a small bowl, mix lemon juice, Dijon mustard, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Gradually whisk in olive oil until the vinaigrette is well combined.
  • Halve avocados, remove pits, and gently peel off skin. Slice each half into 4 thick pieces, then coat in vinaigrette to keep them fresh and vibrant.
  • Using a large, sharp knife, elegantly remove the skin and white pith from the grapefruit. Carefully cut between the membranes to free the juicy grapefruit segments.
  • Place avocado slices decoratively along the perimeter of a large platter, then place grapefruit segments in the center. Drizzle vinaigrette on top and finish with a sprinkle of salt and pepper.
