Avocado and tomato on toast with crispy lettuce.
Ingredients:
  • Toasted whole grain bread
  • Sliced avocado (see How to Cut and Peel an Avocado )
  • Lettuce (Boston Bibb or butter lettuce work well)
  • Sliced fresh tomato
  • Kosher salt
  • Mayonnaise
Instructions:
  • Toast two slices of nutritious whole grain bread per sandwich until golden brown. Meanwhile, prepare your fresh tomato and creamy avocado slices.
  • Spread a generous or modest amount of mayonnaise on one side of each piece of toasted bread. Layer sliced avocado, sprinkle with a touch of kosher salt. Top with lettuce, then sliced tomatoes, and lightly season with salt.
  • Place the second slice of toasted bread on top to complete the sandwich. Feel free to cut the sandwich in half for easier eating. Enjoy your delicious creation!
