Whip up a delicious smashed potato and onion side dish with just a backyard skillet for a quick, easy, and fun cooking experience.
Ingredients:
  • 2 pounds new potatoes
  • 2 tablespoons water
  • 1 onion, minced
  • 2 tablespoons olive oil
  • 1 pinch seasoned salt, or to taste
  • 1 pinch paprika, or to taste
Instructions:
  • In a microwave-safe bowl, add new potatoes and water. Cover and microwave on high until potatoes are soft enough to smash, about 8 minutes.
  • Heat up your outdoor skillet over high heat and lightly oil the grate before placing a cast-iron skillet on the grill to preheat.
  • Pour out the water from the potatoes, then mix in the onions and olive oil. Spread the potato mixture in the skillet and gently smash each potato with a spatula.
  • Grill the onions and potatoes until golden brown and crispy on each side, approximately 5 minutes. Season generously with seasoned salt and paprika.
