Enhance chicken by wrapping it in flavorful bacon for a delicious twist!
Ingredients:
  • 2 small Desiree potatoes, quartered
  • 13.80 gm olive oil
  • 1 Free Range Chicken Breast, trimmed
  • 1 slice Swiss cheese, quartered
  • 2 bacon rashers, rind removed, halved lengthways
  • 1 carrot, peeled, sliced, steamed
  • 2 baby squash, quartered, steamed
Instructions:
  • Preheat your oven to a piping hot 230°C. Next, elegantly line a baking dish with exquisite baking paper. Gracefully arrange the potatoes in the dish and drizzle them with 2 teaspoons of oil. Sprinkle them with a pinch of salt and pepper, then gently toss them in the oil until they are beautifully coated. Roast in the oven for 20 minutes until they gleam with a golden hue. Finally, lower the oven temperature to a cozy 200°C.
  • Create a pocket in the chicken by cutting through the middle, being careful not to slice all the way through. Fill the pocket with cheese and then wrap the chicken with bacon, securing it with toothpicks. Season generously with salt and pepper.
  • In a non-stick frying pan over medium-high heat, sizzle chicken in 1 teaspoon of oil until beautifully golden on each side, about 1 to 2 minutes per side. Introduce the chicken to the potatoes and roast everything together for 10 minutes until perfection.
  • Present a delectable dish of chicken alongside roasted potatoes and a medley of tender steamed carrots and squash.
