Delicious, simple rolls perfect for snacking any time! Ideal for weekends and afterschool treats.
Ingredients:
  • 450g (3 cups) plain bread flour
  • 20.00 ml (14g/2 sachets) dried yeast
  • 10.00 gm caster sugar
  • 1.20 gm salt
  • 250ml (1 cup) warm milk
  • 40.00 gm melted butter
  • 175g short-cut bacon rashers, finely chopped
  • 120g (1 1/2 cups) coarsely grated cheddar
Instructions:
  • In a large bowl, mix together flour, yeast, and sugar. Stir in the salt, then create a well in the center of the mixture and add the milk and butter.
  • Combine the mixture using a wooden spoon, then bring the dough together with your hands in the bowl. Transfer the dough to a lightly floured surface and knead for 10 minutes until smooth and elastic.
  • Grease a large bowl with olive oil. Place the dough in the bowl and cover with a damp tea towel. Allow to rise in a warm, draft-free spot for 45 minutes to 1 hour, until almost doubled in size.
  • Make a powerful indentation in the center of the dough using your fist. Transfer the dough to a lightly floured surface and knead for 2 minutes, or until the dough is stretchy and springs back to its original size.
  • Preheat the oven to 190C. Dust a baking tray with flour. Divide the dough into 8 equal portions, shape each into a ball, then gently flatten each one about 5cm apart on the tray.
  • Sprinkle the bacon and cheddar over the rolls, leaving a 1cm border, then cover with a damp tea towel. Allow it to rise in a warm, draft-free spot for 30 minutes or until the dough nearly doubles in size.
  • Place in the oven for 25-30 minutes, or until the cheddar is melted, the rolls are golden, and give a hollow sound when tapped on the base. Then, move them to a wire rack to cool a bit.
