Spicy bacon and beef sushi rolls with melted cheese - a BBQ favorite!
Ingredients:
  • 6 thick slices bacon
  • 0.5 pound lean ground beef
  • 1 tablespoon barbeque spice rub, or to taste
  • 4 thin slices prosciutto
  • 2 jalapeno peppers, sliced into long strips
  • 2 sticks pepper Jack cheese
  • 2 tablespoons barbeque sauce, or to taste
  • 1 cup French-fried onions
Instructions:
  • Lay bacon slices down in a single layer, lengthwise, on a sushi mat.
  • Combine ground beef with spice rub in a large bowl. Spread a thin layer over bacon, leaving 1 inch of bacon uncovered at one end. Top the beef with prosciutto, then line up jalapeno strips and cheese sticks on top.
  • Roll the bacon into a tight spiral.
  • Preheat the grill to 350 degrees F (175 degrees C). Grill the bacon roll with the seam side-down over indirect heat until crisp, which should take about 25 minutes. Brush on some barbeque sauce and grill for an additional 5 minutes until the sauce is nicely glazed. Add the remaining barbeque sauce and continue grilling for another 5 minutes.
  • After grilling, generously coat the dish with crispy fried onions. Slice the dish and present it elegantly with chopsticks.
