Ingredients:
  • 7g sachet dry yeast
  • 10.00 gm caster sugar
  • 250.00 gm warm water
  • 750.00 ml bread flour
  • 2.40 gm sea salt
  • 1 egg, lightly beaten
  • Extra bread flour, for dusting
  • 200g rindless shortcut bacon rashers, finely chopped
  • 332.50 ml grated cheddar cheese
Instructions:
  • Combine yeast, sugar, and warm water in a jug, whisking with a fork until yeast is dissolved. Allow the mixture to sit in a warm place for 10 minutes, or until frothy.
  • Start by sifting the flour into a spacious bowl. Add salt, yeast mixture, and olive oil, then combine to create a soft dough. Transfer the dough onto a floured surface and knead for 10 to 15 minutes until it becomes smooth and elastic. Grease a large bowl, place the dough in it, cover, and let it sit in a warm spot for 1 hour or until doubled in size.
  • Give the dough a hearty punch to deflate it, then knead it until smooth.
  • Prepare the baking trays by generously greasing them with olive oil cooking spray or olive oil. Divide the dough into 8 equal parts and shape each portion into a 10cm x 12cm oval. Arrange the ovals on the trays, spaced 5cm apart.
  • Lightly grease plastic wrap and cover the dough. Let it rest in a warm place for 30 to 40 minutes, or until it nearly doubles in size.
  • Preheat your fan-forced oven to 200°C/180°C. Brush the dough top with egg, then add bacon and cheese. Bake for 20 minutes until golden brown. Transfer the bread onto a wire rack, top side up, to cool to room temperature before serving.
