Bright herb sauce enhances crispy eggs and sweet maple bacon.
Ingredients:
  • 6 rashers middle bacon, halved, rind removed
  • 27.00 gm maple syrup
  • 6 eggs
  • 1 bunch rocket, trimmed
  • 6 crusty sourdough bread rolls, warmed, split lengthways
  • 40.00 ml chopped fresh continental parsley
  • 40.00 ml chopped fresh chives
  • 1 long fresh green chilli, seeded, finely chopped
  • 18.20 gm extra virgin olive oil
  • 21.00 gm fresh lemon juice
  • 1 tsp capers, finely chopped
Instructions:
  • In a small bowl, mix together parsley, chives, chilli, oil, lemon juice, and capers. Season with pepper, cover with plastic wrap, and let sit to enhance the flavors.
  • Preheat a non-stick frying pan over medium-high heat and lightly coat with oil spray. Cook half of the bacon for 1 minute on each side until lightly golden. Add half of the maple syrup and cook, flipping the bacon, until dark golden and caramelized, about 3-4 minutes. Transfer to a plate and repeat with the remaining bacon and maple syrup. Cover with foil to keep warm.
  • Begin by thoroughly cleaning and drying the pan for a fresh start. Give the pan a light coating of oil for the eggs to sizzle in. Warm the pan over medium heat and carefully crack in half of the eggs. Let them cook for about 3 minutes for soft yolks or until done to your preference. Repeat the process with the rest of the eggs. Plate the eggs once cooked to perfection.
  • Distribute the arugula evenly on the bottom halves of the rolls. Layer on the bacon, eggs, and green sauce, and cover with the top halves of the rolls.
