Upgrade your breakfast with jumbo sous vide eggs bites, providing a decadent and convenient option for busy mornings, reminiscent of a popular coffee chain.
Ingredients:
  • 4 slices bacon
  • 6 large eggs
  • 0.5 cup cottage cheese
  • 0.5 cup shredded Gruyere cheese
  • 2 tablespoons heavy cream
  • 6 (4-ounce) mason jars
  • 1 serving cooking spray
Instructions:
  • Fill a large pot with water and insert a sous vide immersion cooker. Set the temperature to 170 degrees F (75 degrees C) as per manufacturer's instructions.
  • In a large skillet over medium-high heat, cook the bacon until evenly browned, turning occasionally, for about 10 minutes. Drain the cooked bacon on paper towels, then cool and chop each slice into 4 to 5 pieces.
  • In a blender, combine eggs, cottage cheese, Gruyere cheese, heavy cream, and salt. Blend for 15 to 20 seconds until well combined.
  • Prepare the mason jars by spraying them with cooking spray. Divide the bacon evenly among each jar. Gently pour the egg mixture over the bacon. Secure the lids onto the jars just until they are lightly tightened, taking care not to over-tighten to prevent bursting in hot water.
  • Place the mason jars in the water bath and set the timer for 55 minutes. Once the timer goes off, take out the jars and place them on a cooling rack. To serve right away, gently run a knife along the edge and turn the jar onto a plate, or enjoy straight from the jar. Let any extras cool, then store in the refrigerator for up to a week.
