Elevate your week with hearty vegetable pasta.
Ingredients:
  • 500g penne rigate
  • 250g rindless shortcut bacon, fat trimmed, chopped
  • 400g button mushrooms, quartered
  • 62.50 ml marinated capsicum, sliced
  • 40.00 ml red wine vinegar
  • 1 bunch spinach, stalks trimmed
  • 82.50 ml grated parmesan
Instructions:
  • Boil pasta in a generously salted large saucepan until perfectly al dente.
  • In a large frypan over high heat, heat oil. Cook bacon for 2 to 3 minutes. Then add mushrooms and toss for 3 minutes until cooked.
  • Add the marinated capsicum, vinegar, and spinach leaves to the pan. Stir and cook for 1 to 2 minutes until the spinach wilts slightly.
  • After draining the pasta, toss it back in the saucepan. Mix in the bacon and spinach, then gently stir over low heat until well combined. Season with salt and pepper to taste. Sprinkle with Parmesan before serving.
