Irresistible spicy bacon caramels made with bacon fat, simple syrup, molasses, and red pepper flakes.
Ingredients:
  • 3 cups water
  • 2 cups strained bacon fat, warmed
  • 2 tablespoons molasses
  • 1 tablespoon red pepper flakes
Instructions:
  • In a small saucepan over medium heat, mix water and sugar to make simple syrup. Boil until sugar dissolves, about 5 minutes. Take off heat and let cool for 7 to 10 minutes.
  • In a small saucepan, mix together simple syrup, bacon fat, molasses, and red pepper flakes. Cook over medium heat, stirring often, until a thick syrup forms, about 10-15 minutes. Transfer the syrup to a freezer-safe container.
  • Chill until the syrup solidifies, usually 1 to 2 hours. Cut into individual caramels and wrap each one in waxed paper.
