Indulgent bacon caramel popcorn balls: a flavorful delight for all occasions.
Ingredients:
  • 12 ounces bacon, cut into 1/4-inch pieces
  • 8 cups popped popcorn
  • 0.5 cup white sugar
  • 2 tablespoons cold unsalted butter, cubed
  • 1 pinch salt
  • 4 teaspoons water, at room temperature
  • 1 teaspoon unsalted butter, softened
Instructions:
  • Fry bacon in a pan over medium heat until golden brown and crispy, about 5 to 7 minutes. Drain on a strainer placed over a bowl to collect excess grease. Allow the bacon to cool to room temperature.
  • In a large mixing bowl, combine popcorn with cooled bacon, gently mixing until evenly coated. Set aside for later use.
  • In a small saucepan over medium heat, add white sugar. Once the sugar starts melting around the edges and becomes clear, gently shake and swirl the pan to incorporate the remaining granules into the melted sugar. Avoid using any utensils to stir.
  • Once the sugar is mostly melted and the mixture achieves a light amber color, lower the heat to low.
  • Turn off the heat after the sugar has completely melted. Add all the cold butter cubes to the pan at once. Gently shake and swirl the pan until the butter is fully melted into the sugar. Avoid using a whisk at this point.
  • Combine water and salt, then whisk vigorously until a smooth, thin caramel sauce forms. If the sugar hardens, keep whisking until everything dissolves. If needed, turn heat to low until smooth.
  • Take the mixture off the heat and skillfully drizzle caramel sauce over the bacon and popcorn while gently tossing with a buttered spatula. Keep tossing until the caramel evenly coats the popcorn.
  • Gently butter your hands, and once the mixture is cool enough to hold its shape, shape it into balls. Avoid squeezing the balls tightly to keep the popcorn light. Place the balls on a pan to cool.
