Cheesy bacon muffins loaded with chives, garlic, and a hint of tangy Parmesan. Enhanced with creamy mushroom soup for ultimate moistness.
Ingredients:
  • 6 thick slices bacon
  • 2 cups all-purpose flour
  • 1.5 tablespoons white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1.5 teaspoons garlic powder
  • 4 teaspoons dried chives
  • 0.33333298563957 cup grated Parmesan cheese
  • 1 cup shredded sharp Cheddar cheese
  • 1 egg, beaten
  • 0.5 cup milk
  • 0.5 cup cream of mushroom soup
  • 0.5 cup vegetable oil
Instructions:
  • In a spacious, deep skillet, sizzle the bacon over medium-high heat until perfectly browned. Remove, crumble, and set aside.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and give your muffin pan a gentle greasing.
  • Mix together flour, sugar, baking powder, salt, garlic powder, chives, parmesan cheese, cheddar cheese, and crumbled bacon in a large bowl. In a separate bowl, combine egg, milk, cream of mushroom soup, and vegetable oil. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  • Fill the muffin pans with the batter and bake at 400°F (200°C) for 20-25 minutes, or until a toothpick comes out clean when inserted into a muffin.
