Crispy bacon-Cheddar potato skins topped with creamy sour cream and fresh green onions - a versatile and delicious dish for any occasion.
Ingredients:
  • cooking spray
  • 4 large baking potatoes
  • 3 tablespoons canola oil
  • 1 tablespoon grated Parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon ground paprika
  • 0.125 teaspoon ground black pepper
  • 1.5 cups shredded Cheddar cheese
  • 8 strips cooked bacon, crumbled
  • 0.5 cup sour cream
  • 4 stalks green onion, sliced
Instructions:
  • Preheat the oven to 475 degrees F (245 degrees C) and generously grease a baking sheet with cooking spray.
  • Halve potatoes lengthwise and carefully hollow out the pulp, leaving a 1/4- to 1/2-inch-thick skin. Arrange the potatoes on the baking sheet.
  • In a small bowl, mix together oil, Parmesan cheese, salt, garlic powder, paprika, and pepper. Brush this flavorful mixture over both sides of the potato skins.
  • Bake in the preheated oven for 30 to 45 minutes until crisp; thicker skins may require additional time. Sprinkle Cheddar cheese and bacon inside skins and bake for an extra 2 minutes until cheese is melted.
  • Garnish with a dollop of sour cream and sprinkle with chopped green onions. Serve immediately while hot.
