Bacon-Cheeseburger Potato Pie

Satisfying one-pot meal serves six.
Ingredients:
  • 1 1/2 lb extra-lean (at least 90%) ground beef
  • 1/2 cup Progresso™ plain bread crumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup ketchup
  • 2 teaspoons yellow mustard
  • 3 tablespoons butter or margarine
  • 1/4 teaspoon garlic salt
  • 3/4 cup milk
  • 2 cups mashed potato flakes
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1 medium tomato, chopped
  • 3 slices precooked bacon, crumbled
  • 2 green onions, sliced, if desired
Instructions:
  • Preheat oven to 375°F. Combine ground beef, bread crumbs, onion, ketchup, mustard, and salt in a medium bowl. Press the mixture into an ungreased 9-inch pie plate, forming a crust. Bake for 15 minutes.
  • Place water, butter, and garlic salt in a medium saucepan and bring to a boil. Remove from heat and stir in milk. Use a fork to mix in the potato flakes and then fold in 1/2 cup of cheese.
  • Take the partially baked beef crust out of the oven and discard any drippings. Evenly spread the potato mixture into the crust. Put it back in the oven and bake for an additional 10 to 15 minutes until the beef is fully cooked and a thermometer inserted in the center of the crust reads 160°F, and the potatoes are hot.
  • Take the pie out of the oven, and generously sprinkle tomato, the rest of the 1/2 cup of cheese, and crumbled bacon on top. Put it back in the oven and bake for 5 more minutes, or until the cheese is nicely melted. Remove from the oven, sprinkle with green onions, and let it sit for 10 minutes before serving.
