Bacon-Guacamole Quesadillas

30-minute guacamole, cheddar, and bacon quesadillas - irresistibly delicious!
Ingredients:
  • 2 medium avocados, pitted, peeled and cubed
  • Juice of 1 medium lime
  • 1/2 teaspoon ground cumin
  • Dash ground red pepper (cayenne)
  • 1/2 cup finely chopped onion (1 medium)
  • 1 plum (Roma) tomato, diced
  • 1/8 cup chopped fresh cilantro
  • 1 clove garlic, finely chopped
  • 1/2 lb bacon, diced into 1/2-inch pieces
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1 1/2 cups shredded Cheddar cheese (6 oz)
  • 2 to 3 teaspoons vegetable oil
Instructions:
  • Mash avocado in a medium bowl using a fork, then combine with the rest of the guacamole ingredients and mix well. Set aside.
  • Cook the bacon in an 8-inch skillet over medium heat until it turns crisp, then let it drain on paper towels.
  • Lay out 4 tortillas. Spread guacamole evenly, leaving a 1/2 inch border on each. Add bacon and cheese equally on each. Place another tortilla on top of each.
  • Begin by warming 1 teaspoon of oil in a 10-inch skillet over medium heat. Gently place one quesadilla in the skillet and cook until both sides are golden brown.
  • Continue making quesadillas in the same manner with the remaining ingredients, adding extra oil to the skillet if necessary.
  • Serve the quesadilla by cutting it into wedges.
