Ingredients:
  • 1 tablespoon white sugar
  • 8 slices bacon
  • 0.75 cup whole wheat flour
  • 0.25 cup grated Parmesan cheese
  • 3 tablespoons dried parsley
  • 1 tablespoon dried rosemary
  • 2 tablespoons dried sweet basil
  • 1.75 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1.75 teaspoons salt
  • 1.3333333730698 cups milk
  • 2 large eggs
  • 3 tablespoons butter, melted
  • 2 tablespoons Dijon mustard
  • 0.75 cup sour cream
  • 2 teaspoons white sugar
  • 1 tablespoon minced onion
Instructions:
  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 5 minutes per side. Place on a paper towel-lined plate to drain. Once cooled, crumble the bacon.
  • Preheat the oven to 200°F (95°C) to keep the waffles warm. Then, preheat the waffle iron and lightly coat it with cooking spray.
  • In a bowl, mix all-purpose flour, whole wheat flour, Parmesan cheese, parsley, rosemary, basil, sugar, baking powder, baking soda, and salt. In a small bowl, whisk together milk, eggs, butter, and Dijon mustard. Slowly pour the wet mixture into the dry mixture and gently stir until just combined.
  • Pour a generous 1/3 cup of batter into each square of the hot waffle iron until golden brown, about 3 to 4 minutes. Keep the finished waffles warm in the oven while cooking the rest.
  • Combine the sour cream, sugar, and onion in a small bowl. Drizzle the flavorful onion sauce over the warm waffles and top with crispy bacon crumbles before serving.
