Bacon-Wilted Kale with Apples

Seasonal sauteed kale with crispy bacon and apple - a delicious pairing.
Ingredients:
  • 3 thick-cut peppered bacon, cut into 1/2-inch pieces
  • 1 medium chopped Honeycrisp apple
  • 1 teaspoon minced garlic
  • 8 cups torn kale leaves
  • 1 tablespoon cider vinegar
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
Instructions:
  • Preheat a large skillet over medium heat. Add bacon to skillet and cook until crispy and fat is released, approximately 3 minutes. Leave 1 tablespoon of bacon drippings in the skillet.
  • Cook apple until tender for about 2 minutes, then stir in garlic and add kale gradually. Cook until kale is tender for about 8 minutes. Drizzle with vinegar and season with salt and pepper.
