Baileys Red Velvet Tres Leches Cake

Decadent tres leches cake infused with Baileys Red Velvet Liqueur and topped with fresh strawberries.
Ingredients:
  • 1 cup flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup white sugar
  • 3 large eggs
  • 0.33333334326744 cup milk
  • 1.5 cups Baileys Red Velvet Liqueur, divided
  • 2 cups heavy cream, divided
  • 1 cup evaporated milk
  • 1.5 teaspoons vanilla extract
  • 1 (4 ounce) package cream cheese, at room temperature
  • 2 tablespoons white sugar
  • 1 pint strawberries, sliced
Instructions:
  • Preheat the oven to 350 degrees F and prepare an 8x8x2-inch baking dish by greasing it and lining the bottom with parchment paper.
  • Combine flour, baking powder, cinnamon, and salt in a small bowl. In a separate medium bowl, use an electric mixer on high speed to beat sugar and eggs until very light and fluffy for 5 to 7 minutes. Mix in half of the dry ingredients on low speed until blended. Add milk, then the rest of the dry ingredients, and mix until just blended. Pour the batter into the cake pan and smooth the top.
  • Bake for 25-30 minutes until the top springs back when gently pressed and a toothpick inserted in the center comes out clean. Allow to cool in the pan on a wire rack for 15 minutes.
  • In a medium bowl, combine 1 1/4 cups Baileys, 1 cup cream, evaporated milk, and vanilla, whisking until smooth. Use a skewer to poke holes all over the cake, then pour half of the Baileys mixture over. Allow to soak for 10 minutes before adding the remaining mixture. Let the cake cool completely, then cover and refrigerate for at least 8 hours or up to 2 days.
  • Gently loosen the cake by running a knife around the edge of the pan. Invert the pan onto a plate, remove the parchment paper.
  • Combine cream cheese and sugar in a medium bowl until smooth. Mix in 1/4 cup Baileys Red Velvet. Whip 1 cup cream until firm peaks form, then fold into the cream cheese mixture. Spoon over the cake and garnish with strawberries.
