Get ready to make everyone smile this summer with a decadent banana split!
Ingredients:
  • 2 oranges, juiced
  • 4 ripe bananas
  • 20g (1 tbsp) butter or margarine, softened
  • 50g (1/4 cup, firmly packed) brown sugar
  • Vanilla ice-cream, to serve
  • 40.00 ml crushed nuts
Instructions:
  • Preheat your oven to 180°C.
  • Set aside 80mls (1/3 cup) of the orange juice. Arrange bananas on a foil-lined baking tray. Make a lengthwise cut on the bananas and gently peel back to expose the flesh. Place 1 teaspoon of butter or margarine on each banana and sprinkle with 1 teaspoon of brown sugar. Pour the remaining juice evenly over the bananas, then close the skins. Bake in a preheated oven for 10 minutes or until the bananas are tender (skins will darken). Take out of the oven and let them cool for 5-10 minutes before serving.
  • In a small saucepan, blend 80mls (1/3 cup) of reserved orange juice with the remaining 2 tablespoons of brown sugar. Bring to a boil and simmer over medium heat for 5 minutes, stirring occasionally, until it thickens into a syrup. Remove from heat and keep warm. Drizzle the syrup over the bananas on individual plates and top with ice-cream and nuts, Enjoy!
