BBQ chicken breasts baked with sweet potatoes and cranberries create a cozy, flavorful dinner for two on a chilly winter evening.
Ingredients:
  • 1 medium sweet potato
  • 3 medium carrots, peeled
  • 1 medium apple, peeled and cored
  • 0.5 medium sweet onion
  • 2 (5 ounce) skinless, boneless chicken breast halves
  • 2 tablespoons barbecue sauce
  • 1 cup dried cranberries
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a baking dish.
  • 1. Use a fork to pierce the sweet potato several times, then cut it in half. 2. Place the sweet potato halves in a microwave-safe dish and add about 1/2 inch of water. 3. Microwave on high for 10 minutes.
  • Chop carrots, apple, and onion, then layer them at the bottom of the baking dish.
  • Coat the chicken breasts generously with barbecue sauce on both sides and place them on top of the vegetables.
  • Take the sweet potato out of the microwave and peel off the skin. Chop the sweet potato into big chunks and scatter them into the baking dish. Sprinkle cranberries over the top.
  • Cook the chicken in the preheated oven until tender and no longer pink in the center, for 45 to 55 minutes. Let it cool for 5 minutes before serving.
