Baked Peach-Bourbon BBQ Chicken Breast

Elevate baked BBQ chicken with a simple, homemade peach-bourbon sauce.
Ingredients:
  • 1 cup ketchup
  • 0.5 cup brown sugar
  • 0.5 cup bourbon (such as Four Roses®)
  • 0.25 cup peach preserves
  • 3 tablespoons apple cider vinegar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1 teaspoon Montreal steak seasoning (such as McCormick®)
  • 0.5 teaspoon liquid smoke flavoring
  • 1 pound skinless, boneless chicken breast halves
  • salt and freshly ground black pepper to taste
Instructions:
  • Preheat oven to 375°F (190°C).
  • In a saucepan over medium-high heat, mix together ketchup, brown sugar, bourbon, peach preserves, vinegar, Worcestershire sauce, mustard, steak seasoning, and liquid smoke flavoring. Boil, then simmer for 5 minutes. Set aside half of the sauce for another time.
  • Lay the chicken on a sheet pan or broiling tray and generously coat it with sauce using a basting brush.
  • Place the chicken in the oven and let it bake for 15 minutes. Afterward, turn the chicken breasts over and generously baste them with the delicious reserved sauce.
  • Position an oven rack 6 inches away from the heat source and preheat the broiler.
  • Continuously baste and flip the chicken every 3 minutes while broiling until the center is no longer pink and the juices run clear, for a total of 10 to 15 minutes. Ensure the internal temperature reads at least 165 degrees F (74 degrees C) using an instant-read thermometer.
