Grilled Chicken with South Carolina-Style BBQ Sauce

Grilled Chicken with South Carolina BBQ Sauce: Tangy mustard-based BBQ sauce meets perfectly grilled chicken for a sweet, spicy, and smoky flavor explosion!
Ingredients:
  • For the BBQ sauce:
  • 1 cup prepared yellow mustard
  • 1/4 cup packed dark brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon bottled hot sauce, plus more to taste
  • For the chicken:
  • 4 chicken thighs, bone-in with skin
  • 4 drumsticks, bone-in with skin
  • 1 tablespoon sea salt
Instructions:
  • Prepare the barbecue sauce ahead of time: In a 2-quart saucepan, combine all the sauce ingredients and cook over medium-high heat until very steamy, about 2 minutes. Be cautious as the sauce may bubble. Reduce the heat to medium-low and cook until thickened, about 5 to 7 minutes, stirring constantly. The sauce should be thick enough to leave trails with a spoon. Allow to cool and reserve 3/4 cup for the chicken, keeping the rest for serving. The sauce can be refrigerated for up to 2 weeks.
  • 20 minutes before cooking, season the chicken generously with sea salt on both sides and allow it to rest in the refrigerator while you prepare the grill.
  • For a charcoal grill, once the coals are gray and very hot, carefully shift them to one side for both direct and indirect heat. Or, for a gas grill, set up two temperature zones.
  • Coat chicken generously on both sides with 3/4 cups of gourmet barbecue sauce.
  • Sear the chicken on a hot grill: Place the chicken on the hot side of the grill directly over the coals, with the skin-side down. Grill for 2 to 3 minutes, then flip and grill for another 2 to 3 minutes until both sides are nicely browned or slightly blackened.
  • Move the chicken to the side without coals and brush with more barbecue sauce. Cover the grill and cook for 5 to 7 minutes. Flip the chicken and cook for another 12 to 15 minutes until rich golden brown, fully cooked, and reaches at least 175°F internally. Rest assured, the sauce and indirect heat will keep the chicken juicy.
  • Garnish with a drizzle of extra barbecue sauce just before serving.
