Bourbon brown sugar glazed salmon nuggets - a flavorful and restaurant-quality dish baked to perfection.
Ingredients:
  • 8 ounces honey roasted peanuts
  • 1 tablespoon ground black pepper
  • 6 tablespoons butter
  • 1 cup packed brown sugar
  • 0.66666668653488 cup bourbon whiskey (such as Jack Daniel's®)
  • 0.33333334326744 cup soy sauce
  • 1 tablespoon crushed garlic
  • 1 teaspoon onion powder
  • 1.5 pounds salmon fillet, skinned
  • 1 serving cooking spray
Instructions:
  • Crush peanuts in a resealable bag using a rolling pin, meat mallet, or can until finely ground. Stir in pepper until combined.
  • In a nonstick saucepan over medium heat, melt butter. Stir in brown sugar, bourbon, soy sauce, garlic, and onion powder. Allow the mixture to come to a boil and simmer until the sauce thickens to a syrupy consistency, which should take about 20 to 30 minutes. Remove from heat and let cool until warm to the touch but not scalding, approximately 5 minutes. Enjoy the delicious sauce!
  • Slice the thinner parts of salmon fillets into strips and place them in a small bowl. Gently toss them in a bit of the sauce. Dice the thicker parts of salmon fillets into 1-inch cubes and add them to the saucepan, stirring to evenly coat them in the sauce. Allow the flavors to meld for approximately 10 minutes.
  • Preheat your oven to 450 degrees F (230 degrees C) and generously grease a large glass baking dish with cooking spray.
  • Arrange the salmon strips on one side and the salmon cubes on the other side of the baking dish. Ensure all pieces are coated with sauce and evenly sprinkle the peanut and black pepper mixture on top. Avoid overlapping the pieces.
  • Bake in the preheated oven until the strips flake easily with a fork, about 5 to 6 minutes. Then remove from the dish, and bake the cubes until they flake easily with a fork, approximately 5 more minutes.
