Bourbon glazed salmon and roasted asparagus: A gourmet, easy dinner party delight.
Ingredients:
  • 1 bunch fresh asparagus, trimmed
  • 4 (6 ounce) salmon fillets
  • olive oil
  • 1 pinch salt and ground black pepper to taste
  • 0.33333334326744 cup brown sugar, divided
  • 5.3333334922791 fluid ounces bourbon whiskey, divided
  • 0.25 cup non-dairy butter spread (such as I Can't Believe It's Not Butter®)
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • Wash asparagus under cold water and trim the ends. Pat dry with a paper towel and arrange on a baking sheet in a single layer.
  • Clean the salmon by rinsing it and gently drying it with paper towels. Place the salmon skin-side down on a baking sheet.
  • Drizzle asparagus with olive oil, then generously season with salt and pepper, ensuring the seasoning is evenly distributed by gently rubbing it into the asparagus.
  • Roast asparagus in a preheated oven, flipping halfway through, until golden brown, for about 20 minutes.
  • Massage the salmon with a generous amount of brown sugar, then drizzle half of the bourbon over it. Allow the flavors to meld together for 15 to 20 minutes.
  • In a nonstick pan over medium-low heat, melt the butter spread. Stir in the rest of the brown sugar until dissolved. Add the salmon fillets and cook for 5 to 7 minutes on each side, until the fish flakes easily. Pour in the remaining bourbon in the last 2 minutes of cooking. Serve with asparagus.
