Baked brie cob with cranberry sauce recipe

Ingredients:
  • 1 White Cob Loaf*
  • 80g cranberry sauce
  • 2 x 250g brie wheels, at room temperature
  • 36.40 gm extra virgin olive oil
  • 8 thyme sprigs
Instructions:
  • - Preheat your oven to 180°C and line a baking tray with parchment paper. - With a large serrated knife, carefully cut off the top 4cm of the loaf. - Hollow out the bread, leaving a 2cm-thick shell (save the inside for later use). - Brush the inside of the bread shell with delicious cranberry sauce.
  • Trim the top rind of each brie using a small sharp knife. Place one brie cut-side up on a clean surface. Stack the other brie cut-side down on top in the center of the bread shell. Score the top rind with the knife, then drizzle with oil before transferring to the lined tray.
  • Bake for 20 minutes, or until the brie is gooey and bubbly, and the bread is golden and crispy. Garnish with fresh thyme sprigs, and serve.
