Baked Caprese Crostini

Caprese crostini: A tasty twist on caprese salad with Roma tomatoes, mozzarella, basil, and olive oil on crispy bread. Perfect appetizer!
Ingredients:
  • 1 large French baguette
  • 4 tablespoons extra-virgin olive oil, divided
  • sea salt to taste
  • 5 large Roma tomatoes
  • 30 small slices fresh mozzarella cheese
  • 1 bunch fresh basil, leaves removed and coarsely chopped
  • ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Slice the baguette into 30 pieces. Brush each slice on both sides with 2 tablespoons of olive oil. Place all the slices on a baking sheet and generously sprinkle with salt.
  • Place the bread in the preheated oven and toast until it turns light golden brown and crisp, which should take approximately 5 minutes.
  • Slice each tomato into six even pieces while the bread is toasting.
  • Take the fragrant bread out of the warm oven and elegantly turn the slices over. Adorn each slice with vibrant tomato and creamy mozzarella, then delicately sprinkle with a touch of sea salt.
  • Place the dish back in the oven and bake for approximately 5 minutes until the tomato is heated through and the mozzarella is melted.
  • Place the crostini on a serving platter, scatter fresh basil on top, then finish with a luxurious drizzle of the remaining 2 tablespoons of olive oil. Lightly sprinkle with sea salt and cracked black pepper to add a burst of flavor.
