Garlic bread loaded with juicy tomatoes, fragrant basil, and gooey mozzarella, baked to perfection.
Ingredients:
  • 1 head garlic
  • 1 tablespoon olive oil
  • 1 (1 pound) loaf ciabatta bread, split in half horizontally
  • 1 tablespoon dried rosemary
  • 10 leaves fresh basil leaves, chopped
  • 3 tomatoes, sliced
  • 2 teaspoons balsamic vinegar
  • 8 ounces fresh mozzarella cheese, sliced
Instructions:
  • Preheat your oven to 400°F (200°C).
  • Prepare the garlic by cutting off the top to expose the cloves, trimming about 1/4 inch off each one. Drizzle with olive oil and wrap in foil. Bake in a preheated oven until tender, around 35 minutes. Once done, squeeze out the cloves into a dish and mash into a paste.
  • Spread butter on the cut sides of the bread and sprinkle with rosemary. Place on a baking sheet and toast in a preheated oven for 5 minutes. Remove from oven and spread with garlic paste. Top one half with basil and tomatoes, drizzle with balsamic vinegar, and cover with sliced mozzarella. Return to baking sheet to assemble sandwich.
  • Bake until the cheese is gooey and melted, around 10 minutes. Let the sandwich cool a bit before putting it together. Slice into 4 pieces before serving.
