Summery caprese-inspired dish with roasted grape tomatoes, creamy mozzarella, and fragrant basil. Perfect for a speedy weeknight meal.
Ingredients:
  • 0.5 cup oil and vinegar dressing, divided
  • 4 skinless, boneless chicken breasts
  • 1 pint grape tomatoes, halved
  • 1 bunch fresh basil, thinly sliced
  • 1 (8 ounce) package fresh mozzarella cheese, sliced
Instructions:
  • Preheat the oven to a toasty 375 degrees F (190 degrees C).
  • Transfer 1/4 cup of dressing to a small bowl.
  • Place chicken breasts in the center of a grill pan. Brush both sides with dressing and season with salt and pepper.
  • Transfer the last 1/4 cup of dressing into a mixing bowl. Combine with tomatoes and basil, ensuring they are thoroughly coated.
  • Evenly coat the chicken with the tomato mixture in a single layer.
  • After baking for 20 minutes, generously layer the hot chicken with fresh mozzarella before placing it back in the oven.
  • Bake until the mozzarella cheese is golden brown, bubbly, and the chicken is fully cooked, for about 10 more minutes. Insert an instant-read thermometer into the center of the chicken - it should reach at least 165 degrees F (74 degrees C).
