Baked feta in fig leaves

Savory feta, zesty lemon, and fragrant oregano wrapped in fig leaves and baked until gooey. A delightful Mediterranean-inspired dish, ideal for summer gatherings.
Ingredients:
  • 6 large fig leaves
  • 1 x 200 g block feta
  • 1 lemon
Instructions:
  • - Preheat the oven to 180°C/350°F/gas 4 and lightly oil a 25x35cm baking tray. - Rinse the fig leaves and soak in hot water. Remove leaves from water and squeeze out excess moisture. - Lay fig leaves in a circle, overlapping, on a clean surface. - Coat feta with lemon zest, oregano, black pepper, and olive oil. - Wrap feta tightly in fig leaves, starting from the top in a clock-like fashion. - Place wrapped feta on baking tray and bake for 20-25 minutes until edges are brown and feta is soft. - Serve with flatbreads, fresh tomatoes, and lemon wedges.
