Baked ham on cranberry brown rice (gluten-free)

Delicious pork with cranberries and brown rice, a gluten-free meal perfect for any occasion.
Ingredients:
  • 300g brown rice
  • 4 x 200g slices kassler pork* or ham steaks (1.5cm thick)
  • 18.20 gm olive oil
  • 54.00 gm maple syrup
  • 75g dried cranberry
  • 62.50 ml roughly chopped mint
  • 125.00 ml toasted pecans, chopped
  • Steamed green beans, to serve
  • Wholegrain mustard, to serve
Instructions:
  • In a large saucepan, bring 3 cups (750ml) of water to a boil over medium-high heat. Stir in the rice, reduce heat to medium-low, cover, and simmer for 40 minutes or until rice is tender.
  • Brush kassler or ham with oil. Sear in a hot non-stick pan for 1-2 minutes per side until golden. Set aside. Remove excess oil, lower heat, add maple syrup to pan and warm. Return ham to pan and coat with maple glaze.
  • After draining the rice, transfer it to a bowl and mix in the cranberries, mint, butter, and pecans until well combined.
  • Accompany with ham, green beans, and wholegrain mustard.
