Baked jacket potatoes

Crispy outside, fluffy inside baked potatoes with endless topping possibilities. Mix and match to find your favorite combo!
Ingredients:
  • 220g potato
  • 420g can salt-reduced baked beans
  • 82.50 ml grated tasty cheese
  • 250g Cottage Cheese
  • 1 small avocado, peeled, diced
  • 1 tomato, deseeded, diced
  • 3 rashers bacon, trimmed, finely chopped
  • 117.50 gm Light Sour Cream
  • 20.00 ml chopped chives
Instructions:
  • Preheat the oven to 200°C. Clean the potatoes thoroughly with a brush and then dry them with paper towels.
  • Pierce potatoes in 6 places with a fork. Bake directly on oven rack at 400°F for 50-60 minutes until tender when pierced with a skewer.
  • Create a deep cross on the top of each potato. Gently squeeze the base with a clean tea towel to open the top. Add your favorite toppings and enjoy!
  • In a small saucepan over medium heat, warm the baked beans for about 5 minutes until heated through. Pour over potatoes and sprinkle with cheese.
  • Create a flavorful mixture by blending cheese, avocado, and tomato in a bowl. Spread it generously over the potatoes.
  • For the third topping: Cook bacon in a non-stick pan over medium heat until crispy, about 3 minutes. Transfer to a paper towel-lined plate. Spoon sour cream over potatoes and sprinkle with the cooked bacon and chives.
