Baked lemon chicken with flavorful marinade of butter, lemon, spices.
Ingredients:
  • 0.5 cup unsalted butter, melted
  • 2 lemons, juiced
  • 1 tablespoon paprika
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic salt
  • salt and ground black pepper to taste
  • 4 (6 ounce) skin-on, bone-in chicken breasts, split
Instructions:
  • Combine butter, lemon juice, paprika, oregano, garlic salt, salt, and pepper in a bowl. Transfer the mixture to a resealable plastic bag. Add chicken breasts, ensuring they are coated well. Remove excess air, seal the bag, and refrigerate for 3 to 4 hours.
  • Preheat the oven to a cozy 325 degrees F (165 degrees C), then nestle the chicken in a baking dish, skin-side up, and lovingly pour the marinade all around the chicken.
  • Roast the chicken in the oven until cooked through and juices run clear, about 45 minutes. Check with an instant-read thermometer - it should read 165°F (74°C) near the bone.
