Festive salmon dish with Christmas colors and summery flavors.
Ingredients:
  • 250.00 ml chopped fresh flat-leaf parsley leaves
  • 125.00 ml chopped fresh chives
  • 82.50 ml chopped fresh dill sprigs
  • 1 small red onion, finely chopped
  • 1 long red chilli, finely chopped
  • 1 garlic clove, crushed
  • 23.40 gm wholegrain mustard
  • 65.63 gm lemon juice
  • 75.08 gm olive oil
  • 2 x 650g salmon fillets, skin intact (see note) lemon wedges, to serve
Instructions:
  • Preheat your oven to 220°C (200°C fan-forced). Mix parsley, chives, dill, onion, chili, garlic, mustard, lemon juice, and half of the oil in a bowl.
  • Lay down 1 salmon fillet, skin side-down, on a cutting board. Spread two-thirds of the parsley mixture on top. Place the remaining fillet on top, skin-side up, then secure with kitchen string at 3cm intervals. Rub the remaining oil all over. Transfer to a baking dish.
  • Cook until medium-well done or to your preference, typically about 15 minutes. Slice into 8 pieces and serve with lemon wedges and the reserved parsley mixture.
