Cheesy Baked Shrimp with Zesty Tomatillo Sauce, Jalapeños, and Fresh Herbs.
Ingredients:
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped, about 1 cup
  • 1-2 jalapeno chiles, seeded, minced
  • 3 cloves garlic, thinly sliced
  • 1 pound tomatillos, chopped
  • Salt
  • 1/2 cup clam juice OR 1/4 cup water*
  • 1 pound shrimp, cleaned, deveined
  • 1 cup Cotija queso seco cheese (can substitute feta)
  • 1/4 cup chopped cilantro
  • Lime juice
  • Black pepper
  • Flour tortillas, to serve
Instructions:
  • Heat oil in a pan, sauté onions and jalapeños on medium-high heat for 5 minutes until onions start to brown. Stir in garlic and cook for another minute.
  • Add tomatillos to the pot. Cook over medium heat for 10 minutes until they are tender but still maintain their shape, sprinkling salt over them as they cook.
  • If using clam juice, pour it into the pan and simmer uncovered until reduced by half. If using water, add the 1/4 cup of water without reducing.
  • Sprinkle shrimp and cheese over the dish, then bake at 425°F for 10 minutes.
  • Once the pan is out of the oven, consider safety by cooling the handle with ice if necessary. To finish, mix in cilantro and sprinkle with lime juice and freshly ground black pepper just before serving.
